Woo Can Cook (live) | Thai Noodle Stir Fry (Chicken Pad Thai), AMA!

hi hello there! We’re having chicken pad thai for dinner tonight, which is one of my favorite pantry-friendly noodle dishes of all time. For those not familiar, pad thai is a Thai rice noodle stir fry that leans heavily on the use of tamarind paste and fish sauce. This is one of my favorites to have in the back pocket when I haven’t gone grocery shopping in a while, because almost the entire dish comes together with either pantry or freezer friendly ingredients. Woo Can Cook is a series where we reproduce fun foods and recipes from my childhood. Some of them are authentically Chinese and/or pan-Asian, but a lot of them are odd Americanized versions that I inherited from my parents and grandparents while growing up in the Bay Area/California. INGREDIENTS (dry) – 4 cloves garlic, crushed and minced – 2 tbsp ginger, peeled and minced – 1 pepper (Thai chile, jalapeno, serrano, or similar), diced – 2 medium carrots, julienned – 2 green onions, sliced – 3 eggs, whisked – vegetable oil – 8 oz rice noodles, soaked in boiling water – 1 chicken breast – 1/4 cup peanuts, crushed – cilantro INGREDIENTS (sauce) – 6 tbsp fish sauce – 4 tbsp tamarind paste – 4 tbsp brown sugar – 1/2 lime, juiced – kosher salt
